Chicken Soup

Once again, a “throw things together” recipe that turned out delicious!  I served this to friends last week, and they liked it as much as I did.  Enjoy!

Chicken Soup

3 boneless skinless chicken breast halves, diced

1 onion, diced

4 Tbsp. butter

about 4 cups chicken broth

3 carrots, peeled and diced

1 cup frozen peas

1 cup frozen green beans

1/2 tsp. sage

1/2 tsp. oregano

1/2 tsp. basil

1 tsp. marjoram

1 tsp. thyme

salt & pepper

1 can pinto beans (do not drain)

1 can black beans (do not drain)

1 large can diced tomatoes (do not drain)

Melt the butter in a large soup pot.  Add the onions and sautee until tender.  Add the broth, chicken, vegetables, herbs, salt & pepper, and bring to a boil.  Simmer for 20 minutes or until carrots are tender.  Add beans, tomatoes, and pasta.  Simmer 15 minutes more, or until pasta is tender.
